The Harvard Brief Dictionary of Music has galop with one L.

Gallup, New Mexico, has two Ls.

Russ Darr and I conferred on a number of pieces to chase the lions out at the finish. We listened to many galops, but I was a traditionalist and it was hard to beat "The Big Cage". We've heard the Karl King original written in honor of Clyde Beatty, and in thumbing through the bull riding music for a rodeo, I discovered "The Big Cage Galop". If I could get them to play that galop like I want it, it would need two L's to keep me happy.

Over here (UK) we'd tend to the Galop. I remember one of P.T. Barnum's 1889 books published here apologising for using English English - despite his actually almost non-circus book having 2 drawings of things at Olympia on the cover!

I don't mind how thjey spell it on covers - just keep playing it!
