For reasons Kenny Dodd may better know, early in the Beatty season of '64, veteran Cookhouse Steward John Staley departed, and Cookhouse was immediately taken over by Billy McCabe.

Billy was good at the job, and dutifully enforced all the rules, such as men take off their hats when they sat down. I dined at the workingmen's Long Table, and one day a First of May tough guy refused Billy's admonition about removing his hat. "Ya wanna try to take it off me?" the guy offered. Billy quietly said, "See that man over there? That's Frank Orman, the General Manager of the show. He's a gentleman. He removes his hat at the table. You can remove yours now, like he has, or lose Cookhouse for the season." The guy looked at Orman, looked at Billy, and off came the hat.
