Fourths of July were very big deals for circus cookhouses. Many shows, big and small, outdid themselves with patriotic bunting and added frills, and went to great lengths to invite usually excluded people, especially other circus owners and the press, to see the wonders of the big noon meal. The night meal found the facilities stripped right back down to the bare essentials.
