Chic: The true Jackelope or Jackalope is an antlered animal; this is the much rarer horned subspecies.
They both taste much like the Capybara.
Once years ago I picked up an old hitch-hiker who proceeded to tell me his fascinating life story between Little Rock and Nashville. Claimed to have been a paleontologist and to have been on an expedition that dug up a mastodon or mammoth in some arctic part of the world.
He added that the party had sliced off some steaks and cooked and ate them. For some inexplicable reason I asked what it tasted like. I should not have been surprised when he replied, "Much like elephant."

We have an old family run BBQ
joint here in Sarasota that is
well subscribed by the locals
called "The Oaks" with an entire
collection of various versions
of mounted Jackelope heads on the
wall over the counter
Here in Texas the Jackalope have Pronghorn type horns..:))
Personally, I liked the grasshopper stopping the old steam train engine better!
