When did Ringling switch from the traditional stock cars to the style used today?

Your basic answer lies in the closing of the Big Top days in 1956 to the Blue Sky tour going out in 1957 when RBBB leased railroad baggage cars to transport the elephants. A photo was just posted here on Buckles Blog a few days ago. I might be found wrong here, but I don't believe the standard 72' Railroad show stock cars were ever used after that to any extent. Most all of the rail equipment was sold between 1956 and 1961 when they made the move to Venice. By then the tunnel car operations were being perfected and placed into use.

In 1957 we jumped from Sarasota to NYC using from 15 to 20 cars of the old train that included coaches, flats and stock cars. Bitterly cold when we arrived.
At what point after that, the elephants and horses were switched over to baggage cars and the disposal of the old cars, I couldn't say.
At one point on the way up, the train stopped and I heard someone say that Gena Moroski had somehow fallen off the train. She was fetched back aboard and we continued on.
